Healthy Pancakes with high protein and low carbohydrate topped with fresh strawberries, blueberries and raspberries.

High Fibre High Protein Low Carb Pancakes

Ingredients list

  • 30g (~3 tbsp) coconut flour (alternatively you can use Spelt flour)
  • 2 Pinches baking powder
  • Pinch sea salt
  • 3 egg whites
  • 1 tbsp puréed Apple baby food
  • 1/4 cup of unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 50g Strawberries

Cooking instructions:

Sift all dry ingredients together. Whisk eggs with vanilla extract until stiff peaks form. Combine with the dry mixture and add applesauce slowly. Add almond milk a tablespoon at a time until thick batter forms. Spray a pan with cooking spray and heat on a low/medium heat. Cook pancakes with a lid on for 2-3 minutes or until the edges brown, before flipping very gently and cooking for an extra minute or two, until cooked thoroughly. Serve with freshly chopped strawberries, blueberries or raspberries.
