This is a super healthy breakfast recipe you can try on the weekend! If you like coriander and Indian spices you will be in for a treat! This recipe has all the great superfood ingredients to give you body proper health boost!
How to cook this healthy breakfast:
- On a small pan (or medium if you’re cooking for 2 people) heat up a good spoonful of olive oil. Once hot, stir in chopped ginger just quickly and 20 secs or so later add the Turmeric and give it a quick stir (only a few secs, don’t burn it!).
- Then add Broccoli and mushrooms (cut into small pieces), add a pinch of salt and grind some fresh black pepper and give it another quick stir to mix all the flavors. Pour a little bit of water (just enough to cover the bottom of the pan, reduce heat to low, cover the pan with a lid and let it steam for a minute.
- Finally, crack in 2 -3 full eggs over the veggies (egg yolks are good for you), place small bunch of Coriander (the whole thing) and cover again with the lid and steam for further 2 mins till the eggs are cooked and veggies are just cooked but still with a good bite (in other words, don’t overcook the veggies, this will reduce the good nutrients).

Serve with a slice of rye bread and Philadelphia cheese.
