You gonna love this recipe! If you are short of time but would like to have tasty, healthy and packed full of good nutrition type lunch, this one is a keeper (yes looks fancy and you could argue this may take some prepping but it really does not, I promise).
How to cook it:
Heat up a small portion of brown rice (you should always have some batch ready in the fridge), about 150g portion (less or more depending on your calorie needs).
For the chicken breast, simply marinade with fresh chilli, salt, pepper & olive oil (again I recommend you always have plenty pre-grilled chicken ready to heat in the fridge). Portion size about the size of the palm of your hand.
For dressing simply mix greek yoghurt, olive oil, salt, black pepper and some freshly chopped mint.
To serve, simply drizzle some of the dressing onto the hot serve of the brown rice, spread a portion of fresh spinach (chopped if you like) with red capsicum and top it up with the chicken. To finish, drizzle leftover of the mint-yoghurt dressing and sprinkle over with roughly chopped almonds.
5 mins, if you have pre-cooked rice & pre-grilled chicken ready in the fridge. Simply heat those for 3 mins in the microwave .. (happy days 🙂
- Brown rice
- Chicken breast
- Bag of fresh spinach leaves
- Red capsicum
- Black pepper (grinder)
- Himalayan Pink Salt (or regular salt ok too)
- Greek yogurt
- Fresh mint
- Olive oil
(Most of the stuff should be in your pantry anyway.)
To impress someone simply add a little bunch of mint leaves on top.
